Ingredients:
- 2 pounds purple top turnips
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and peel the turnips. Cut them into 1-inch cubes.
- In a large bowl, toss the turnip cubes with olive oil, salt, pepper, and rosemary (if using).
- Spread the seasoned turnips in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until tender and caramelized, flipping halfway through.
